Oïshinoya is a Parisian adaptation by Guillaume Guedj and Shinichi Sato of a Japanese canteen concept typical of the streets of Tokyo. This restaurant opened in 2016 in the gallery Montmartre in Paris, and offered doburi, these bowls of rice covered with meat simmered with onions.
Cyrille Varet has made for this place counters in steel covered with a wooden plate, and 24 metal stools with leather tops.
